Green Lentils Salad

This is another recipe that can be made fairly quickly with a little bit of preparation ahead of time. It requires:

  • 1 package of green lentils.
  • 1 onion – diced
  • 1 green pepper – diced
  • 1 red pepper – diced
  • 6 to 8 of diced garlic
  • Salt to taste
  • Cayenne pepper to taste
  • Juice of 1 lime
  • olive oil for sauteing¬† (about 1 to 2 tablespoon)

Directions:

  1. Start of by soaking the package of green lentils (ideally for at least 8 hours but can be as little as an hour).img_20180319_1746502381507041481581734.jpg
  2. You can also chop the green pepper, red pepper, garlic and onion ahead of time if you would like:
  3. Using your trusty instant pot, cook the green lentils on high pressure setting for about 15 minutes (this time can change depending upon how long you soak the lentils. If you soak them for a longer period of time then it will require less time).
    1. Directions to setup the steaming rack
      1. add water at the bottom of the instant pot.
      2. place the steaming rack.
      3. transfer the lentils that have been soaked into a steel type of bowl.
      4. place the bowl on top of the steaming rack.
  4. while the instant pot is cooking your lentils, you can work on sauteing / caramelizing the onion / garlic / green pepper / red pepper:
  5. add olive oil to a pan and add garlic first and let it turn brown.
  6. then add onion and cook it until it is brown / caramelized.
  7. add green pepper / red pepper and let it soften:
  8. if this is done before your instant pot rings then let it aside.
  9. when the instant pot rings, open it and check to see if your lentils are cooked (if they are soft then they are cooked but they should not be mushy).
  10. add the lentils to pan that is full of veggies.
  11. Add your spices and lime juice.
  12. You are done!!
