Stuffed Bell pepper

There are days that you want to eat refined carbohydrates but want to limit yourself. So, this is the perfect recipe. It includes a little bit of quinoa but you can eliminate it for a perfect healthy recipe.


  1. 1 package of firm tofu.
  2. 1/2 a cup of cooked leftover quinoa
  3. 1 package of bell peppers (see below for example)
  4. 1 tsp of cumin
  5. 1 tsp of coriander powder
  6. 1 tsp of taco seasoning
  7. 1 tsp of chipotle pepper
  8. salt to taste
  9. cayenne pepper to taste
2. Cut the top of the Bell Peppers
1. Red, Yellow and Orange Bell Peppers washed and ready for use
2. Cut the top of the Bell Peppers
3. Place them in a cup cake pan as seen and spray them with vegetable oil.
4. Add Olive Oil to the pan
5. crumble a package of tofu
6. Add quinoa, cumin powder, coriander powder, cayenne pepper, and salt to the tofu.
7. Sautee until brown
8. Add the mixture to the bell peppers
9. Place it in the oven at 425 degrees for 10 minutes. Remove the tray after 10 minutes are done and add the cheese on top and place it backin the oven to melt the cheese.
10. Chop the cilantro.
11. Sprinkle the cilantro on top of the stuffed bellpepper and you are ready to eat!!!
