Zucchini Pasta Salad with Tahini Lime Sauce

Who doesn’t love pasta? Unfortunately pasta comes with a lot of unnecessary complex carbohydrates. So to avoid those carbohydrates, we jumped on the zucchini noodles (zoodles) bandwagon. This salad is simple to make and the rich tahini dressing adds extra protein.


  • Zucchini (3)
  • Yellow Squash (2)
  • Chickpeas (1 can)
  • Sun dried tomatoes (1 cup)
  • Cherry Tomatoes (10)
  • Tahini (1/3 cup)
  • Limes (3)
  • Honey (1.5 teaspoon)
  • Garlic (3 cloves)
  • Cayenne pepper
  • Salt

Recipe (4 servings)

  1. Start by preparing your noodles. We don’t have a spiralizer; but we just used our mandolin to cut thin strips of zucchini and squash.
  2. Wash and drain the chickpeas. Slice the cherry tomatoes in half.
  3. To prepare your dressing, stir the tahini, juice of 3 limes, honey, chopped garlic, 1/2 teaspoon of cayenne pepper and salt to taste.
  4. Toss the “zoodles”, chickpeas, cherry tomatoes, and sundried tomatoes with the dressing. Enjoy!
