Meal Plan – Week 9

We hope you had a great week. It was quite a busy one for us but for no particular reason. The days are going by quickly and we are already looking forward to thanksgiving. This week’s meal plan is all over the place…literally. We featured a Russian-like “stroganoff” dish, followed by an Tunisian inspired cauliflower and chickpea salad. Then we even had some Italian “bolognese” and lastly ended with some good ol’ kansas city-style pulled jackfruit. We hope you enjoy! As always, you will first find the menu with clickable links to the menu, followed by the shopping list. We shop at Trader Joes because it’s a one-stop shop for us and generally has everything. But you can obviously find these ingredients in any large grocery stores.

Proteins:

  • Quinoa (2/3 cups)
  • Chickpeas (2 cans)
  • Green Lentils (1 cup)

Vegetables:

  • Shiitake mushrooms (4 oz)
  • Baby bella mushrooms (10 oz)
  • Garlic (15
  • Parsley (1 bunch)

  • Cauliflower (1 medium sized)
  • Broccoli and Kale Slaw Salad Mix (1 packet, purchased at Trader Joes)
  • Spaghetti Squash (1, small)
  • Tomato (2)
  • Onion (2)
  • Shredded Carrots (10 oz packet)
  • Canned Tomato (1 can, diced, no salt added)
  • Green jackfruit (canned, 20 oz, in brine)

Spices/Oils/Etc:

  • Dry white wine
  • Coconut milk (1 can)
  • Olive Oil
  • Crushed red Pepper
  • Italian Seasoning
  • Paremsan, Asiago, Romano Cheese Blend (freshly shaved)
  • Harissa Paste
  • Honey
  • Tomato Paste
  • Kansas City Style Barbecue Sauce
